- 8-ounces of shredded cheddar cheese
- 1/2 cup of minced fresh cilantro
- 1/4 cup of sliced green onions
- 1 cup of sour cream
- 1 cup of guacamole
- 1 teaspoon minced garlic
- 1 teaspoon of dried oregano
- 2.5 cups of cubed chicken
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- Season the chicken with the salt, pepper, oregano, and minced garlic.
- Cook chicken breasts until they have an internal temperature of 175 degrees and then cut them into cubes. Put it into a bowl and set aside.
- Dice up the red, green and yellow bell peppers and place them into a bowl.
- Use the 2 teaspoons of corn oil to grease a 13×9-inch baking dish.
- Make a layer of tortilla chips, chicken, cilantro, peppers, and cheese.
- Make another layer of tortilla chips, chicken, cilantro, peppers, and cheese.
- Preheat an oven to 350-degrees Fahrenheit.
- Place the pan into the oven and cook uncovered for approximately 15-20 minutes.
- Remove from oven and serve with sour cream and guacamole.
